Madagascar, located in the Indian Ocean and sometimes called the Bourbon Islands, is the world's leading producer of bourbon vanilla. Madagascar bourbon vanilla comes from an orchid, each flower giving birth to a pod after pollination. Local growers engage in organic vanilla production, without chemical fertilizers.
The harvest begins in May, where the pods are picked and selected for ripening. Once mature, they are conditioned to become fat and fragrant pods, characteristic of bourbon vanilla.
These pods, black, contain a high level of humidity and weigh between 2 and 12 grams.
Chefs use vanilla to create sweet recipes, cutting the pod to extract the seeds. It is also possible to make vanilla essence or extract, or to immerse it in rum. To preserve their aroma, it is advisable to store the pods in a jar away from light.
